Sweet Potato Dish (Print Version)

# Ingredients:

01 - 4 pounds orange sweet potatoes.
02 - ½ cup softened butter.
03 - ¼ cup packed light brown sugar.
04 - 2 - 2½ teaspoons table salt.
05 - 1 teaspoon ground cinnamon powder.
06 - 1 teaspoon pure vanilla extract.
07 - ¾ cup roughly chopped pecans.
08 - 3 cups tiny marshmallows.

# Instructions:

01 - Pop sweet potatoes in a 450°F oven for about an hour until they're super soft.
02 - Turn oven down to 350°F.
03 - Take off potato skins and dump them in a big bowl.
04 - Throw in butter, brown sugar, salt, cinnamon, and vanilla. Use an electric mixer to whip until it's creamy.
05 - Pour the mixture into a 9x13 baking dish.
06 - Sprinkle pecans and scatter marshmallows on top.
07 - Stick it back in the oven for 20-25 minutes until the marshmallows turn golden brown.

01 - Fantastic side for any special occasion meal.
02 - You can prep the potato mixture up to 3 days early and keep it in the fridge.
03 - Feel free to use different sized marshmallows or swap out the nuts if you want.
