Set your oven to 350°F. Stick corn with husks straight on the oven rack and cook for 35-40 mins until soft and moist.

If you're using a grill, you can keep husks on or take them off for grill marks. You can also bake them for 30 mins first, then throw them on the grill for a bit of char.

Mix mayo and powdered garlic together in a little bowl.

Take off the husks after cooking. Spread the garlic mayo mix on each corn. Put cotija on a plate and roll each ear through it.

Add a sprinkle of cilantro and chili powder. Give everyone lime pieces to squeeze over their corn.
