Corn Street Style Grilled (Print Version)

# Ingredients:

→ Main Components

01 - Corn on the cob with husks intact (5 pieces)
02 - Mayo (4 tbsp)
03 - Powdered garlic (¼ tsp)

→ Garnishes

04 - Crumbled cotija cheese (½ cup)
05 - Minced fresh cilantro (3 tbsp)
06 - Ancho or chipotle chili powder (½-1 tsp)
07 - Lime quarters for serving

# Instructions:

01 - Set your oven to 350°F. Stick corn with husks straight on the oven rack and cook for 35-40 mins until soft and moist.
02 - If you're using a grill, you can keep husks on or take them off for grill marks. You can also bake them for 30 mins first, then throw them on the grill for a bit of char.
03 - Mix mayo and powdered garlic together in a little bowl.
04 - Take off the husks after cooking. Spread the garlic mayo mix on each corn. Put cotija on a plate and roll each ear through it.
05 - Add a sprinkle of cilantro and chili powder. Give everyone lime pieces to squeeze over their corn.

# Notes:

01 - If you don't like spicy food, try using smoked paprika instead of chili powder.
02 - You can double or triple this for big parties.
