One-Pan Cajun Rice Sausage (Print Version)

# Ingredients:

→ Main Ingredients

01 - 14 ounces andouille sausage, sliced into ¼-inch rounds
02 - 1 cup long grain white rice
03 - 1½ cups chicken broth
04 - 10 ounce can diced tomatoes with green chilies

→ Vegetables

05 - 1 red bell pepper, cut into strips
06 - 1 green bell pepper, cut into strips
07 - ½ yellow onion, chopped
08 - 3 cloves garlic, finely chopped

→ Seasonings & Oil

09 - 1 tablespoon Cajun seasoning
10 - 1 tablespoon cooking oil

→ For Serving

11 - Chopped green onions as garnish

# Instructions:

01 - Pour oil into a big, deep pan over medium-high heat. Toss in sausage and cook for 3-5 minutes till it gets nice and brown.
02 - Throw bell peppers and onion into the pan. Let them cook with the sausage for 5 minutes until they're soft and slightly browned.
03 - Mix in garlic and Cajun seasoning. Let it cook 1-2 minutes until you can smell all those good flavors.
04 - Pour in tomatoes, rice, and broth. Wait for it to boil, then cover and turn heat to low. Let it simmer for 20 minutes until the rice soaks up all the liquid.
05 - Take it off the heat and keep it covered for 5 more minutes. Gently stir the rice to mix everything together. Sprinkle green onions on top and it's ready to eat.

# Notes:

01 - You can keep leftovers in a sealed container for up to 4 days
02 - Try using kielbasa if you can't find andouille sausage
03 - Want it spicier? Add some chopped jalapeño with the bell peppers
