Spicy Paneer Wrap (Print Version)

# Ingredients:

→ Paneer Coating

01 - 6 tablespoons strained yogurt or thick greek yogurt
02 - 1/2 tablespoon ginger-garlic mix
03 - 1/4 teaspoon ajwain seeds
04 - 1/4 teaspoon yellow turmeric
05 - 1/2 teaspoon ground coriander
06 - 1/2 teaspoon ground cumin
07 - 1/2 teaspoon mixed spice blend
08 - 1/2 teaspoon dried mango powder
09 - 1/4 teaspoon tangy spice mix (if you want)
10 - 1 teaspoon mild red pepper powder
11 - Salt as needed
12 - 1 teaspoon fresh lime juice
13 - 200 grams fresh cottage cheese cubes

→ Herb Sauce

14 - 1/2 cup fresh cilantro
15 - 1/2 cup fresh mint
16 - 1 spicy green pepper
17 - 1 inch fresh ginger chunk, diced
18 - 1-2 fresh garlic bits
19 - 1/4 teaspoon sour mango dust
20 - 2 tablespoons thick drained yogurt
21 - 1/2 teaspoon toasted cumin dust

→ Flatbread Mix

22 - 1 cup brown chapati flour
23 - 1/4 teaspoon salt
24 - 1/2 tablespoon cooking fat
25 - 1/2 cup plain water

→ Crunchy Mix

26 - 1/3 cup thin cabbage strips
27 - 1/3 cup shredded orange carrots
28 - 1/3 cup bell pepper strips
29 - 1/3 cup sliced raw onions
30 - 1/4 teaspoon bright chili powder
31 - 1 teaspoon zingy spice blend
32 - 1 teaspoon citrus juice
33 - Salt as you like

# Instructions:

01 - Combine all coating stuff except cheese. Toss in cheese blocks, make sure they're covered well, and let sit for half an hour.
02 - Throw cilantro, mint, hot peppers, ginger, and garlic with spices into blender. Add thick yogurt and whizz until smooth.
03 - Combine flour, salt, fat, and water. Work into a pliable ball. Let it sit for 20-30 minutes.
04 - Throw all cut veggies together with tangy spices, citrus juice, and salt.
05 - Flatten dough balls into thin rounds. Cook on hot flat pan with a bit of oil until spots appear.
06 - Fry the seasoned cheese chunks on medium-low for about 4 minutes till they're done inside.
07 - Smear sauce on bread, stick cheese in middle, pile veggie mix on top. Wrap it up in paper or metal foil.

# Notes:

01 - You can pack these for lunch by completely wrapping in aluminum foil.
02 - They turn out way better when you use really thick strained yogurt for the cheese coating.
