Gizzard Plantain Nigerian Dish (Print Version)

# Ingredients:

→ Gizzard Boiling

01 - 2 pounds chicken gizzard, cleaned thoroughly
02 - 1 teaspoon salt
03 - 1/2 teaspoon flavor cube or stock powder
04 - 1/4 teaspoon curry powder
05 - 1/4 onion, chopped or 1 tablespoon onion powder

→ Main Ingredients

06 - 1 ripe plantain, diced into chunks
07 - 2 medium tomatoes
08 - 3 large red bell peppers (puree 2, chop 1)
09 - 4 garlic cloves, crushed
10 - 2 habanero peppers, or adjust to heat preference
11 - 1 large onion

→ Seasonings

12 - 1/2 teaspoon curry powder
13 - 1 teaspoon salt
14 - 1/4 teaspoon black pepper (if desired)
15 - 1 teaspoon flavor cube
16 - 2 sprigs thyme
17 - Fresh herbs (basil, leeks, or celery) to finish

# Instructions:

01 - Mix gizzards with salt, flavor cube, curry powder and onion. Pour in water and cook for 20 minutes till soft
02 - Roughly blend 2 red bell peppers, onion, and tomatoes using a food processor
03 - Fry plantains till they turn golden. Quickly toss boiled gizzards in hot oil for 30-60 seconds
04 - Simmer blended mix until it thickens, then stir in your seasonings
05 - Toss in fried plantains, gizzards, chopped peppers and herbs. Mix for 2 minutes until everything's coated nicely
