Thai Chicken Peanut Salad (Print Version)

# Ingredients:

→ Simple Peanut Sauce

01 - ¼ cup smooth peanut butter
02 - 3 tablespoons reduced salt soy sauce
03 - 3 tablespoons honey
04 - 2-3 tablespoons fresh squeezed lime juice
05 - 1 birdseye chili, chopped finely
06 - 2 teaspoons crushed garlic
07 - 2 teaspoons grated fresh ginger
08 - 2 teaspoons fish sauce
09 - 1 tablespoon mild oil (like vegetable or canola)
10 - 2 tablespoons rice vinegar
11 - 3-4 tablespoons water, for consistency

→ Salad

12 - 2 cups pulled cooked chicken
13 - 2 carrots, grated or diced
14 - 1/2 cup crushed peanuts
15 - 1/2 cup chopped herbs (cilantro and/or basil)
16 - 1 cup kale pieces, stems taken out
17 - 1 bunch scallions, green bits chopped
18 - 1 red bell pepper, diced or grated
19 - 1 large juicy mango, diced or sliced thin
20 - 1 medium cabbage head, sliced or grated (around 6 cups)

# Instructions:

01 - Throw all sauce stuff in your food processor: peanut butter, soy sauce, honey, lime juice, chili bits, garlic, ginger, fish sauce, oil, rice vinegar, and 3 tablespoons water. Blend till it's silky smooth. Give it a taste and make it thinner with extra water if needed - one more tablespoon usually does the trick for a runnier sauce that spreads better through your salad.
02 - Grab a big bowl and chuck in all your salad stuff: the chicken, carrots, peanuts, herbs, kale, scallions, bell pepper, mango, and cabbage. Mix it all up gently so everything's spread out nicely.
03 - Drizzle however much peanut sauce you want over your salad and mix till everything's nicely coated. Enjoy straight away with some extra peanuts and herbs on top if you're feeling fancy.
04 - Split the plain salad mix between your meal containers. Keep the peanut sauce in separate little containers. Pop in the fridge for up to 4-5 days. When you're ready to eat, just pour the sauce on, close the lid and give it a good shake, or dump it in a bowl and mix it up.

# Notes:

01 - You can keep this salad in your fridge for 4-5 days if you store the sauce separately from the veggies.
02 - To save time, grab bags of pre-shredded carrots and cabbage at the grocery store.
03 - Grabbing a ready-made rotisserie chicken works great here and cuts down on cooking time.
