Hot Sour Thai Soup (Print Version)

# Ingredients:

→ Seafood

01 - 1 1/2 pounds uncooked medium shrimp, complete with heads

→ Aromatics

02 - 5 stems fresh lemongrass
03 - 15 Kaffir lime leaves, either fresh or frozen
04 - 1/2 onion, sliced into chunks
05 - 4-6 Thai chilies (or some Thai chili paste to your liking)
06 - 1 inch chunk galangal root (if you've got it)

→ Other Ingredients

07 - 1/3 cup plain cooking oil
08 - 6 cups water
09 - 2 tablespoons fish sauce
10 - 1 cup straw or button mushrooms, cut into slices
11 - 1 lime, squeezed
12 - Handful of cilantro and extra lime chunks for topping

# Instructions:

01 - Take off the shrimp heads and keep them nearby. Shell and clean the shrimp bodies
02 - Cook the shrimp heads with some salt in oil until they turn red and crunchy. Put aside
03 - Cut and ready the lemongrass, chop the galangal, then crush all your aromatics including the lime leaves, onion chunks, and hot chilies
04 - Let aromatics bubble in water for 5-10 minutes till you smell their scent. Take out any tough lemongrass bits if needed
05 - Toss in mushrooms and let them cook for 1 minute. Add your shrimp and fish sauce, cook for 45 seconds. Top it off with lime juice and your homemade shrimp oil
