# Ingredients:

01 - 1 cup (125g) flour, leveled with a spoon
02 - 3 eggs, large size
03 - 3/4 cup (180ml) milk
04 - 1/2 cup (120ml) sparkling water or milk/water, your choice
05 - 2 tbsp sugar
06 - 2 tbsp unsalted butter, melted and cooled
07 - 1 tsp vanilla extract
08 - Pinch of salt to taste

09 - 1 cup (240ml) cold heavy whipping cream or heavy cream
10 - 2 tbsp powdered sugar
11 - 1/2 tsp vanilla extract
12 - 8 ounces (230g) strawberries, fresh

→ Strawberry Sauce Ingredients

13 - 8 ounces (230g) fresh strawberries
14 - 2 tbsp powdered sugar (adjust the sweetness as you like)
15 - 1 tsp lemon juice
16 - Grated zest from half a lemon
17 - 1 tsp vanilla extract

# Instructions:

01 - Put all the crepe ingredients into a bowl and blend them with an immersion blender or hand mixer until smooth. If doing this by hand, start by whisking the eggs and flour together, then slowly mix in the other ingredients. Don't stress over small lumps; they'll work themselves out. Let the batter rest while you move on to the other steps.
02 - Rinse and cut the strawberries into slices. In a separate bowl, mix the cream, vanilla, and powdered sugar. Whip the mixture using a stand or hand mixer with the whisk attachment. Beat at medium-high speed until stiff peaks form—this should take about 3 minutes. Stop whisking as soon as you hit the right texture and avoid over-mixing.
03 - In a food processor, toss in the strawberries, powdered sugar, zest, vanilla, and lemon juice. Puree the ingredients until the sauce is completely smooth.
04 - Spread a tiny amount of butter (roughly 1 tsp) onto a non-stick pan. Heat it up on medium to medium-high. Pour a thin layer of batter onto the hot pan, swirling and tilting it evenly. Fry each crepe for about 30 seconds until the surface looks cooked and the bottom turns golden. Slide a spatula under the edges, flip the crepe, and cook for 10-15 more seconds. Keep going with the rest of your batter.
05 - Allow the freshly made crepes to cool for a bit. Add a spoonful of whipped cream in the center, toss on some strawberry slices, and fold or roll the crepe however you like. For a perfect finish, drizzle with the strawberry sauce.
