In a saucepan, combine water, unsalted butter, salt, and sugar. Set over high heat and bring to a boil. Once boiling, lower the heat and add the plain flour gradually, stirring constantly until the mixture forms a smooth dough. Remove from heat.

Transfer the dough to a large mixing bowl. Allow it to cool for 4–5 minutes. Once slightly cooled, add vanilla extract and the egg. Blend thoroughly with an electric hand mixer until the mixture is smooth and uniform.

Spoon the dough into a piping bag. Preheat the air fryer to 190°C. Lightly coat the fryer basket with nonstick cooking spray. Pipe bite-sized portions of dough into the basket, taking care not to overcrowd. Alternatively, portion the dough by spoonfuls.

Lightly brush the tops with butter. Air fry for 10–12 minutes or until golden brown. Work in batches if necessary to promote even cooking.

In a shallow dish, mix the sugar with the ground cinnamon. While still warm, immediately transfer churro bites to the mixture and toss gently to coat evenly. If desired, brush lightly with extra melted butter or a mist of water to help the coating adhere.

Serve churro bites warm with optional dips such as chocolate sauce, honey, or hazelnut spread.
