Heat your oven to 425°F. Coat a big baking tray with cooking spray. Melt the butter in a pan over medium heat.

Put the chopped garlic in the melted butter and cook for half a minute. Mix in the honey, smoked paprika, salt and pepper. Throw in carrots and coat them in the mixture, letting them soak for a minute or two.

Use tongs to move carrots to your greased baking tray, but save the sauce in the pan. Bake them for 20 minutes.

While your carrots are baking, cook down the leftover sauce for 2 minutes. After the first 20 minutes, roll the carrots in this thicker sauce and bake for another 5-7 minutes until soft. If you want, broil them for 30 seconds at the end to brown them up.

Sprinkle with fresh parsley and eat while hot.
