Rinse apples well. Cut them into ¼-inch slices, then punch out the middle with a 1¼-inch round cutter. Soak the slices in water with a bit of lemon juice to keep them from browning.

Use paper towels to blot the apple slices completely dry, then stick them in the fridge to get nice and cold.

Get your chocolate or candy melts all smooth and runny using a double boiler or quick bursts in the microwave. If you're using a metal donut pan, give it a quick spray (skip this for silicon molds—just make sure they're clean).

Drop about 2 tablespoons of melted chocolate in each donut mold (about ⅓ full). Tap and twist the pan so the chocolate climbs up the sides evenly.

Put an apple ring in each chocolate-lined mold, then top with gooey caramel. Chill for 5 minutes till the caramel sets up.

Pour the rest of your melted chocolate on top, making sure it covers all the caramel and apple completely. Chill for 20-30 minutes until totally firm.

Carefully remove treats from molds (turn metal pans upside down or push gently on silicon ones), add a drizzle of melted chocolate on top, and they're ready to eat!
