Sweet Cod with Honey Soy (Print Version)

# Ingredients:

→ For the Sauce

01 - Dark soy (2 tablespoons)
02 - Sweet honey (2 tablespoons)
03 - Toasted sesame oil (1 teaspoon)
04 - Tangy rice vinegar or fresh lime juice (1 teaspoon)
05 - Crushed garlic (1 teaspoon)
06 - Grated ginger root (½ teaspoon)
07 - Toasted sesame seeds (½ teaspoon)

→ For the Fish

08 - Fresh cod pieces (2 5-6oz fillets)
09 - Chopped green onions for topping (1 tablespoon)

# Instructions:

01 - Combine all sauce ingredients in a bowl. Dry the cod pieces with paper towel, coat with 1 tablespoon sauce, and chill for 30 minutes up to 2 hours.
02 - Get your broiler warming on low setting with the rack positioned second from top. Cover your baking tray with parchment and lay the soaked cod on top.
03 - Coat fish with extra sauce and cook under broiler for 12-14 minutes, adding more sauce every few minutes.
04 - Switch broiler to high and let fish cook another 4-5 minutes until it browns nicely and reaches 135-140°F inside.
05 - Sprinkle green onions on top and bring straight to the table.

01 - Try swapping cod with similar white fish like haddock or rockfish
02 - Make extra sauce and boil it down for serving
03 - Kick up the heat with some hot sauce or chili flakes
