Onion Tart with Gruyere (Print Version)

# Ingredients:

01 - 2 sheets puff pastry, left to thaw in fridge overnight
02 - 4 cups thinly sliced sweet yellow onions
03 - 1 tablespoon olive oil
04 - 2 teaspoons brown sugar
05 - 1/2 teaspoon kosher salt
06 - 1 cup shredded Gruyere cheese
07 - 2 teaspoons chopped fresh thyme leaves
08 - 2 tablespoons heavy cream

# Instructions:

01 - Pour oil into a big deep skillet over medium-high heat. Stir onions for 10 minutes till they get soft. Sprinkle in salt and brown sugar, then cook without a lid for another 20 minutes until they turn golden brown. Set aside to cool down.
02 - Get your oven hot at 400°F. Put parchment on a baking tray, lay down pastry sheets with edges touching and push them together to make one big rectangle. Bend the edges up and poke the bottom with a fork.
03 - Scatter cheese all over the pastry bottom. Layer the cooled onions on top. Brush some cream on the edges and scatter thyme around.
04 - Pop in the oven for 18-20 minutes till the cheese gets bubbly and the edges turn golden. Let it sit for 5 minutes before slicing. Add extra thyme on top if you want.
