Beet Orange Mix (Print Version)

# Ingredients:

→ Salad

01 - 4 ounces arugula and spinach blend
02 - 4 medium cooked beets, cut into rounds
03 - 2 peeled and segmented navel oranges
04 - 1/4 cup broken walnuts
05 - 2 tablespoons crumbled feta
06 - Pinch of salt and ground pepper

→ Dressing

07 - 3 tablespoons extra virgin olive oil
08 - 2 tablespoons fresh orange juice
09 - 1 tablespoon red wine vinegar
10 - 1 tablespoon smooth Dijon mustard
11 - 1/4 teaspoon fine salt
12 - 1/4 teaspoon freshly ground black pepper

# Instructions:

01 - Combine and whisk the oil, orange juice, vinegar, mustard and seasonings together until they're completely mixed into a smooth dressing.
02 - Spread your leafy greens across the bottom of your serving dish. Top with sliced oranges and beets in pretty patterns.
03 - Toss the walnuts and feta bits evenly across the top of your colorful arrangement.
04 - Pour your homemade dressing all over the salad. Eat it right away or chill it first. Both ways taste great.

01 - You can make this a day before serving
02 - The dressing stays good in the fridge for a week
03 - Try different leafy greens, cheese or nuts if you want
