Broccoli Cheese Patties (Print Version)

# Ingredients:

→ Base

01 - 3 cups chopped broccoli (both florets and stem)
02 - 2 tablespoons oil (veggie, olive, or canola)

→ Batter

03 - 1 garlic clove, finely chopped
04 - 1/2 cup regular flour
05 - 1/4 cup shredded parmesan
06 - 1 egg
07 - 2 tablespoons milk
08 - 1/2 teaspoon salt
09 - Freshly ground black pepper

→ Yoghurt Sauce

10 - 1/4 cup plain yoghurt
11 - 2 teaspoons fresh lemon juice
12 - Salt and pepper to your liking

# Instructions:

01 - Pop your broccoli in a steamer or boiling water for about 3 minutes until soft but still has some bite. Then gently flatten it with a potato masher, not totally smooshing it but just breaking it down a bit.
02 - Stir the yoghurt with lemon juice, add salt and pepper how you like it. Put it aside for later.
03 - Whisk the egg gently, then throw in the flour, parmesan, garlic, milk, salt and pepper. Mix it up. Add your flattened broccoli and fold everything together.
04 - Warm the oil in a pan on medium heat. Scoop 1/4 cup of the mix, drop it in and press down to make it about 1cm thick. Cook 3 fritters at once, about 2-3 minutes each side till they're golden.
05 - Enjoy these fritters while they're hot, with a dollop of the yoghurt sauce and some lemon wedges if you want.

02 - Don't waste the stems, just peel off the tough outer layer first
