Pop your broccoli in a steamer or boiling water for about 3 minutes until soft but still has some bite. Then gently flatten it with a potato masher, not totally smooshing it but just breaking it down a bit.

Stir the yoghurt with lemon juice, add salt and pepper how you like it. Put it aside for later.

Whisk the egg gently, then throw in the flour, parmesan, garlic, milk, salt and pepper. Mix it up. Add your flattened broccoli and fold everything together.

Warm the oil in a pan on medium heat. Scoop 1/4 cup of the mix, drop it in and press down to make it about 1cm thick. Cook 3 fritters at once, about 2-3 minutes each side till they're golden.

Enjoy these fritters while they're hot, with a dollop of the yoghurt sauce and some lemon wedges if you want.
