Tender Grilled Octopus (Print Version)

# Ingredients:

01 - 2 pounds octopus (small, medium or large), fresh
02 - Olive oil
03 - 2 garlic cloves, coarsely chopped
04 - Juice squeezed from 1 lemon
05 - Salt and pepper as needed
06 - 1/2 teaspoon oregano, dried
07 - 2 teaspoons fresh parsley, chopped

# Instructions:

01 - Add octopus to a pot with enough water to cover it. Let it boil and cook for about 40 minutes.
02 - Take out octopus, wash it and put in a bowl. Pour some olive oil over it, toss in chopped garlic, and leave it sitting at room temp for 30-60 minutes.
03 - Turn your gas grill to medium-high and cut the octopus tentacles into pieces.
04 - Put tentacles on the grill for about 3-4 minutes each side until you see nice char marks.
05 - Transfer to a bowl, pour on some olive oil and lemon juice. Sprinkle with salt, pepper, oregano, and parsley. Feel free to add more chopped garlic if you want.

# Notes:

01 - You'll get better results if you remove the beak and eyes from the octopus before cooking. Putting it in the freezer overnight can make the meat more tender.
