Add octopus to a pot with enough water to cover it. Let it boil and cook for about 40 minutes.

Take out octopus, wash it and put in a bowl. Pour some olive oil over it, toss in chopped garlic, and leave it sitting at room temp for 30-60 minutes.

Turn your gas grill to medium-high and cut the octopus tentacles into pieces.

Put tentacles on the grill for about 3-4 minutes each side until you see nice char marks.

Transfer to a bowl, pour on some olive oil and lemon juice. Sprinkle with salt, pepper, oregano, and parsley. Feel free to add more chopped garlic if you want.
