Tex-Mex Morning Tacos (Print Version)

# Ingredients:

01 - Six large eggs
02 - One cup broken tortilla chips
03 - Shredded Mexican cheese mix (1 cup)
04 - 5-6 warmed flour tortillas

→ Flavorings and Veggies

05 - Diced onions (½ cup)
06 - 1-2 jalapeños, seeds removed and finely chopped
07 - Chopped fresh cilantro (2 tbsp)
08 - Two tablespoons cooking oil
09 - Black pepper and salt as needed

→ Garnishes

10 - Sliced ripe avocados
11 - Onions (pickled)
12 - Hot sauce or red salsa

# Instructions:

01 - Pour oil into a nonstick pan and warm it over medium heat. Toss in your diced onions and chopped jalapeños, and let them cook until they get soft and clear, about 2-3 minutes.
02 - Add salt and pepper to your whisked eggs. Turn down the heat to low and dump the eggs in. Slowly move them around with a rubber spatula every few seconds until they're partly set. Stir in your broken chips, then mix in the cheese. Sprinkle with cilantro, cut the heat, and put a lid on to melt the cheese fully.
03 - Scoop the egg mix into your warm tortillas. Add avocado slices, pickled onions, and drizzle with hot sauce or salsa.
