Tomato Spinach Sausage Pasta (Print Version)

# Ingredients:

→ Main ingredients

01 - 450 g Italian sausage meat, mild or spicy
02 - 320 g farfalle pasta, uncooked
03 - 2 garlic cloves, peeled and roughly chopped
04 - 200 g cherry tomatoes, roughly chopped
05 - 1 handful of fresh spinach leaves

→ Sauce & Seasonings

06 - 2 tablespoons tomato purée
07 - 1 teaspoon paprika
08 - 0.5 teaspoon cayenne pepper
09 - 1 tablespoon olive oil
10 - 0.5 teaspoon chili flakes
11 - 0.5 teaspoon ground black pepper

# Instructions:

01 - Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Drain and set aside.
02 - While pasta cooks, heat olive oil in a large pan over medium heat. Add sausage meat and break it apart with a wooden spoon, sautéing until almost cooked through.
03 - Add chopped garlic to the pan with sausage and continue cooking until fragrant and sausage is no longer pink.
04 - Stir in cherry tomatoes, paprika, and cayenne pepper. Cook for 2–3 minutes, then add tomato purée and spinach, allowing spinach to wilt into the sauce.
05 - Add drained pasta to the sausage mixture and toss well to combine. Season with black pepper and chili flakes before serving.

# Notes:

01 - For optimal flavor, reserve some pasta cooking water and add a splash to the sauce if it becomes too thick.
