Sausage Veggies Skillet (Print Version)

# Ingredients:

→ Main

01 - 1 large zucchini, cut into rounds
02 - 1 large red bell pepper, chopped up
03 - 12 oz sausage, cooked (smoked, cajun, or andouille)
04 - 2 cups of corn kernels (from 3 cooked ears)

→ Seasonings

05 - ½ tsp chili powder
06 - A small handful of chopped fresh cilantro
07 - 1 tbsp olive oil

# Instructions:

01 - Toss the zucchini slices into the preheated skillet and cook for 3 minutes over medium heat. Add some reserved oil if the skillet feels dry.
02 - Slice the cooked sausage into coins. Warm up 1 tbsp of olive oil in a cast-iron skillet on medium. Toss in the sausage coins. Let them brown for 5 minutes on one side, then flip for another 3 minutes. Scoop out sausage onto a big plate. Keep some of the sausage oil in the skillet and pour any extra into a heat-proof bowl.
03 - Use the same skillet to cook up the diced peppers. Stir for about 4 minutes on medium heat. If they start sticking, drizzle a bit of the saved oil. Once done, move them to the plate with the sausage.
04 - Pop the cooked sausage and peppers back into the pan with the zucchini. Toss in the corn kernels along with some of the leftover cooking oil. Dust the top with chili powder and stir until everything’s warmed through on low heat.
05 - Turn off the skillet and scatter the chopped cilantro over the dish just before serving.

# Notes:

01 - The sausage usually has enough salt, but give it a taste and tweak the seasoning if needed.
