Blackened Chicken Alfredo Pasta (Print Version)

# Ingredients:

→ Pasta and Chicken

01 - 450 g Mafaldine pasta or substitute with fettuccine or linguine
02 - 3 boneless, skinless chicken breasts
03 - 60 ml olive oil
04 - Salt, to taste
05 - Freshly ground black pepper, to taste

→ Alfredo Sauce

06 - 85 g unsalted butter
07 - 6–8 cloves garlic, minced
08 - 480 ml heavy whipping cream
09 - 150 g Parmesan cheese, shredded

→ Blackened Seasoning

10 - 4 tablespoons blackened seasoning, divided

→ Homemade Blackened Seasoning

11 - 2 tablespoons smoked paprika or regular paprika
12 - 1 tablespoon cayenne pepper
13 - 1 tablespoon onion powder
14 - 2 teaspoons garlic powder
15 - 1 teaspoon ground black pepper
16 - 1 teaspoon salt
17 - 0.5 teaspoon dried thyme
18 - 0.5 teaspoon dried oregano

19 - Garlic bread, Texas toast, or garlic knots for serving

# Instructions:

01 - In a small bowl, thoroughly mix the smoked paprika, cayenne pepper, onion powder, garlic powder, black pepper, salt, thyme, and oregano until evenly combined.
02 - Pat the chicken breasts dry with paper towels. Evenly rub 2 tablespoons of the prepared blackened seasoning over all sides of the chicken. Set the remaining seasoning aside for later use.
03 - Bring a large pot of salted water to a rolling boil. Add Mafaldine pasta and cook according to package instructions until al dente. Drain thoroughly and set aside.
04 - Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5 to 7 minutes per side until cooked through and well-blackened on the exterior. Remove cooked chicken from the skillet, allow to rest for several minutes, then slice thinly across the grain.
05 - Reduce the heat to medium and add butter to the same skillet. Once melted, add minced garlic and sauté for approximately 1 minute until aromatic. Carefully pour in the heavy whipping cream along with the reserved 2 tablespoons of blackened seasoning. Allow the sauce to gently simmer for 3 to 5 minutes, stirring frequently.
06 - Gradually sprinkle shredded Parmesan cheese into the sauce, stirring continuously until the cheese is fully melted and the sauce becomes smooth and creamy. Season with additional salt and pepper if desired.
07 - Add the drained pasta to the Alfredo sauce and toss thoroughly to ensure all noodles are evenly coated.
08 - Arrange the sauced pasta on serving plates and top generously with sliced blackened chicken. Serve immediately alongside garlic bread or preferred sides if desired.
