Cheesy Chicken Quesadillas (Print Version)

# Ingredients:

→ Mixing the Spices

01 - 1/4 teaspoon garlic powder
02 - 1/2 teaspoon chili powder
03 - 1/2 teaspoon salt
04 - 1/4 teaspoon onion powder
05 - 1/4 teaspoon black pepper
06 - 1/4 teaspoon ground cumin

→ Building the Quesadillas

07 - 1 cup medium cheddar cheese, shredded
08 - 8 tortillas
09 - 4 cups cooked shredded chicken
10 - 1 large onion, chopped small
11 - 1 tablespoon cooking oil
12 - 2 cups Monterey Jack cheese, shredded
13 - 2 tablespoons oil for brushing (optional)

# Instructions:

01 - Mix all the seasoning ingredients in a small bowl until combined.
02 - Heat up oil in a big skillet over medium. Toss in the onions, sprinkle the seasoning blend over them, and cook for 4-5 minutes until softened. Remove from the heat, add the chicken, and stir it all together. Set aside for now.
03 - Stir the Monterey Jack and cheddar cheddar cheeses together in a bowl. Put it aside.
04 - If you want the edges crispy, lightly brush one side of each tortilla with a bit of oil.
05 - Preheat a skillet or griddle over medium-low flame.
06 - Place one of the tortillas (oiled side down if applicable) onto the warmed skillet. Place a layer of cheese on half of the tortilla, then some of the chicken and onion mixture, and finally more cheese. Fold the tortilla over and let it cook for about 2-3 minutes on each side until crispy and golden.
07 - Cut the cooked quesadillas into triangles if you'd like. Serve warm.
