Rinse those apples well to make sure they're clean. Cut them into circles, about ¼-inch thick, and use a 1¼-inch round metal cutter to take out the core. To keep them from browning, soak the slices in water with a splash of lemon juice or use a fruit-preserving solution.

Blot the apple slices with a paper towel to get rid of extra liquid. Once dry, put them in the fridge until they’re fully chilled.

Gently heat up the chocolate or candy melts, either by microwaving or using a double boiler, until it's smooth and glossy. If you’re using a regular donut pan, spray it lightly with non-stick spray. If you’re working with silicone molds, skip the spray, but make sure they’re clean and dry!

Spoon around 2 tablespoons of the melted chocolate into each cavity of the mold—filling them up by about a third. Tap the pan lightly and swirl it around to push the chocolate up the sides evenly.

Place an apple slice into each mold and pour some caramel over it to cover. Pop the pan into the fridge for around 5 minutes so the caramel firms up.

Pour the rest of the chocolate on top of the caramel and apples, making sure nothing is exposed. Put the tray in the fridge again for about 20–30 minutes, or until the chocolate is set.

Pop the treats out of the molds carefully (flip over the metal one or push from underneath if using silicone). Drizzle them with extra chocolate for flair and enjoy!
