Bright Cilantro Mango Lime Sauce (Print Version)

# Ingredients:

→ Sauce Base

01 - 1 medium shallot
02 - Fresh mango chunks, 1 cup
03 - 1 to 1½ cups of cilantro (leaves only)
04 - Juice from fresh lime, ½ cup
05 - ½ teaspoon of fine sea salt or pink salt
06 - Extra virgin olive oil, ½ cup
07 - Optional: ½ teaspoon ground black pepper

# Instructions:

01 - Wash the cilantro thoroughly and pat dry. If you’re making an AIP variation, remove only the leaves.
02 - Throw all the ingredients into a food processor. Blend on high for 30 to 60 seconds until you’ve got a smooth, creamy texture.
03 - Serve it right away or pop it in the fridge to use later.

# Notes:

01 - You can make this AIP-friendly if you skip the black pepper and stick to just the cilantro leaves.
02 - Works great as a dressing for tropical salads, or as a topping for grilled chicken or fish dishes.
