# Ingredients:

→ Filling

01 - 2 large apples (Granny Smith or Honeycrisp), peeled and diced
02 - Juice of 1 lemon
03 - 1 teaspoon ground cinnamon
04 - 2 tablespoons brown sugar
05 - 1 tablespoon granulated sugar
06 - 1 teaspoon vanilla extract
07 - 1 cup unsweetened applesauce

→ Shell

08 - 8 small flour tortillas

→ Finishing

09 - Cooking spray or melted butter for brushing
10 - 1 tablespoon granulated sugar mixed with 0.5 teaspoon ground cinnamon for topping
11 - Caramel sauce for drizzling (optional)

# Instructions:

01 - Preheat the air fryer to 190°C for optimal crispiness.
02 - In a medium mixing bowl, combine diced apples with lemon juice, cinnamon, brown sugar, granulated sugar, and vanilla extract. Mix thoroughly to ensure all apple pieces are coated. Set aside to marinate.
03 - On a clean surface, lay out a tortilla. Spread approximately 1 tablespoon of applesauce along the center, then top with a generous spoonful of the prepared apple mixture.
04 - Tightly roll the tortilla around the filling, tucking in the sides to enclose the mixture. Repeat with the remaining tortillas and filling.
05 - Lightly brush or spray the outer surface of each taquito with cooking spray or melted butter to promote even browning.
06 - Place the taquitos in the air fryer basket in a single layer, ensuring they are not touching. Cook in batches if necessary.
07 - Air fry for 8 to 10 minutes or until taquitos are golden brown and crisp, flipping halfway through the cooking time for uniform texture.
08 - Immediately after air frying, sprinkle warm taquitos with cinnamon sugar. Serve warm, optionally drizzling with caramel sauce.

# Notes:

01 - For best results, use tart apples such as Granny Smith to balance sweetness.
02 - Allow taquitos to cool briefly before serving as filling can be very hot.
