Green Onion Sesame Crackers (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 60 g whole milk
02 - 30 g unsalted butter, melted
03 - 2 g fine salt

→ Dry Ingredients

04 - 150 g cake flour
05 - 2 g instant dry yeast
06 - 1 g baking soda

→ Add-ins

07 - 35 g green onion, green parts only, finely sliced
08 - 10 g sesame seeds (optional)

# Instructions:

01 - In a bowl, whisk together whole milk, melted unsalted butter, and salt until fully combined.
02 - In a separate bowl, mix cake flour, instant dry yeast, and baking soda using a spatula.
03 - Pour wet mixture into the dry ingredients. Stir until a dough begins to form.
04 - Add the finely sliced green onions and, if desired, sesame seeds. Knead briefly until evenly distributed.
05 - Cover with cling film and allow to rest at room temperature for 30 minutes.
06 - Transfer dough between two sheets of baking paper. Press gently with hands, then roll out to a thin rectangular sheet.
07 - Trim edges with a crinkle cut knife for a neat finish. Cut into bite-sized pieces and pierce each with a fork to prevent puffing.
08 - Preheat oven to 170°C. Arrange pieces on a lined baking tray and bake for 15 minutes or until golden and crisp.
09 - Let crackers cool completely on a wire rack before serving.

# Notes:

01 - Resting the dough helps develop a crisp texture and easier rolling.
