Juicy Honey Dijon Chicken Thighs (Print Version)

# Ingredients:

01 - About 1½ pounds of skinless, boneless chicken thighs with excess fat removed

→ Marinade & Glaze

02 - Two teaspoons of Dijon mustard
03 - One freshly minced clove of garlic
04 - Three tablespoons of avocado oil or olive oil
05 - Two tablespoons of pure maple syrup, honey, or brown sugar
06 - One tablespoon of soy sauce or Tamari (gluten-free soy sauce alternative)
07 - A teaspoon of salt, adjusted to your liking
08 - Half a teaspoon of ground coriander
09 - Half a teaspoon of curry powder
10 - One tablespoon of lime juice, freshly squeezed
11 - A fourth teaspoon of black pepper to taste

# Instructions:

01 - Combine the oil, lime juice, honey, soy sauce, mustard, garlic, coriander, curry powder, salt, and pepper in a big mixing bowl. Stir or whisk until smooth.
02 - Drop the chicken into the bowl and stir around until it's fully covered. Let it soak up the flavors for at least 30 minutes. For better taste, leave it in the fridge overnight.
03 - Let a 6-quart air fryer warm up at 380°F (193°C) for three or more minutes.
04 - Place the chicken thighs in the fryer basket in an even layer. Cook for 14–15 minutes, flipping them over with tongs halfway through. Brush any leftover marinade on top after turning.
05 - Take the chicken out of the air fryer and dig in right away. Pair it with your go-to sauce.

# Notes:

01 - Marinate your chicken for up to 24 hours to give it a deeper flavor.
02 - Keep any leftovers in the fridge in a sealed container for 3 to 4 days.
03 - Cool the chicken completely before freezing. Once cool, wrap tightly and store in a freezer-safe bag for up to 4–5 months.
04 - Warm it up again using a microwave or set your air fryer to 300°F (149°C) for about 5 minutes.
