Toss sliced onions into a pan with 1 tbsp butter on medium heat. Cook for roughly 25 minutes till they turn deep brown, giving them a stir now and then. Mix in vinegar during the last 5 minutes.

Shape beef into two skinny 4-oz patties that match your bread size. Sprinkle with salt and pepper. Throw them in the same pan over medium-high heat, about 3 minutes each side.

Wipe the pan clean and melt your leftover butter. Put one side of each bread slice into the melted butter in the pan.

Stack everything in the pan starting with bread (buttery side down), add Swiss cheese, then the patty, pile on caramelized onions, another slice of cheese, and top with bread (buttery side up).

Cook your sandwiches on medium-low for 3-4 minutes on each side until the bread turns golden and the cheese gets all gooey.
