Beef Swiss Melt Sandwich (Print Version)

# Ingredients:

→ Sandwich Base

01 - Whole sweet yellow onion, cut into thin slices
02 - Two tablespoons butter, split
03 - One tablespoon apple cider vinegar

→ Patties

04 - Eight ounces lean ground beef (90/10)
05 - Quarter teaspoon salt
06 - Quarter teaspoon black pepper

→ Assembly

07 - Four slices sandwich bread
08 - Four Swiss cheese slices
09 - Yellow mustard (if you want)

# Instructions:

01 - Toss sliced onions into a pan with 1 tbsp butter on medium heat. Cook for roughly 25 minutes till they turn deep brown, giving them a stir now and then. Mix in vinegar during the last 5 minutes.
02 - Shape beef into two skinny 4-oz patties that match your bread size. Sprinkle with salt and pepper. Throw them in the same pan over medium-high heat, about 3 minutes each side.
03 - Wipe the pan clean and melt your leftover butter. Put one side of each bread slice into the melted butter in the pan.
04 - Stack everything in the pan starting with bread (buttery side down), add Swiss cheese, then the patty, pile on caramelized onions, another slice of cheese, and top with bread (buttery side up).
05 - Cook your sandwiches on medium-low for 3-4 minutes on each side until the bread turns golden and the cheese gets all gooey.
06 - Slice sandwiches corner to corner and eat them right away while they're hot.

# Notes:

01 - You can make more or less depending on how many you need
02 - Lower the heat if your onions start browning too fast
03 - They're best when eaten right after cooking while the cheese is still gooey
