Marry Me Soup (Print Version)

# Ingredients:

01 - 1 cup shredded parmesan cheese.
02 - ¼ cup fresh Italian parsley, chopped.
03 - ½ cup dried orzo.
04 - 3 cups low-sodium chicken broth.
05 - 3 cloves garlic, minced.
06 - ½ cup diced onions.
07 - ¼ cup white wine (optional).
08 - 2 tablespoons all-purpose flour.
09 - 2 ribs celery, diced.
10 - ⅓ cup spinach, sliced thinly.
11 - 2 teaspoons Italian herb blend.
12 - 2 whole roasted red peppers, chopped.
13 - ½ cup half and half.
14 - 1 tablespoon extra virgin olive or avocado oil.
15 - ⅓ cup chopped sun dried tomatoes in oil.
16 - 1 pound Italian sausage.

# Instructions:

01 - Warm up oil in a Dutch oven. Break up sausage and cook until it's browned, about 10-12 minutes.
02 - Pour in wine or broth and scrape up the tasty bits stuck to the pot.
03 - Throw in the onions, celery, roasted peppers, and sun dried tomatoes. Cook until everything softens.
04 - Mix in garlic, herbs, and flour with the veggies. Stir until thickened.
05 - Slowly add the broth and a splash of half and half while stirring.
06 - Toss in the orzo and cooked sausage, then let it simmer. Make sure to stir often for about 10-12 minutes.
07 - Turn off the heat and stir in the rest of the half and half, shredded cheese, spinach, and parsley. Let it sit for 10 minutes.

# Notes:

01 - Give the orzo a good stir now and then to keep it from sticking.
02 - Swap sun dried tomatoes in oil for the dried kind soaked in water.
03 - The soup gets thicker as it sits.
