Sweet Golden Onions (Print Version)

# Ingredients:

01 - 6 tbsp (90g) plain butter, unsalted
02 - 3 lbs (1.4kg) mixed or yellow onions, cut into 1/8 inch slices
03 - Black pepper and kosher salt, add to your liking

# Instructions:

01 - Get your butter bubbling in a big stainless steel pan or a couple of large skillets over medium-high heat.
02 - Toss in your onions and stir now and then until they get soft, which takes about 8 minutes.
03 - Turn heat down to medium-low and keep stirring often. The onions will slowly turn a rich golden-brown and get super sweet, taking 1 to 2 hours. Whenever stuff starts sticking to the bottom, add a tablespoon of water and scrape up those tasty bits.
04 - Throw in salt and pepper until it tastes right to you.

# Notes:

01 - While yellow onions do the job best, you'll get fancier flavors by throwing in a mix of yellow, Vidalia, red onions, and some shallots.
02 - You can keep these in your fridge for up to a week in a tight container. Just warm them up before you use them.
