Get your butter bubbling in a big stainless steel pan or a couple of large skillets over medium-high heat.

Toss in your onions and stir now and then until they get soft, which takes about 8 minutes.

Turn heat down to medium-low and keep stirring often. The onions will slowly turn a rich golden-brown and get super sweet, taking 1 to 2 hours. Whenever stuff starts sticking to the bottom, add a tablespoon of water and scrape up those tasty bits.

Throw in salt and pepper until it tastes right to you.
