Sweet Potatoes with Maple Cinnamon (Print Version)

# Ingredients:

01 - 2 lb sweet potatoes, cut into 1" chunks.
02 - ¼ cup pure maple syrup.
03 - 2 tablespoons extra virgin olive oil.
04 - ¾ teaspoon ground cinnamon.
05 - 1 teaspoon fine sea salt.

# Instructions:

01 - Put your rack right in the middle and warm oven to 425°F. Cover your baking sheet with some parchment.
02 - Stir maple syrup, oil, and cinnamon together until they're fully blended.
03 - Dump sweet potatoes into the maple mix and toss around until they're all covered.
04 - Lay potatoes flat on the sheet so they don't touch each other. Sprinkle with salt. Cook for 30-40 mins, turning every 10-15 mins until they're golden outside and soft inside.

# Notes:

01 - Space potatoes apart for extra crispiness.
02 - They taste better warmed up in a pan, not zapped.
03 - Can stay good in your fridge for 3 days tops.
