Smooth Mango Yogurt Blend (Print Version)

# Ingredients:

→ Mango Lassi

01 - 1 ¼ cup chopped frozen mango chunks (or ripe fresh ones, check notes)
02 - ¾ cup milk (full-fat or 2% works best)
03 - ⅓ cup canned or bottled mango pulp
04 - Tiny sprinkle of kosher salt (under ⅛ teaspoon)
05 - ¾ cup plain full-fat yogurt
06 - 2-3 tablespoons honey or sugar, according to your taste
07 - ½-¾ cup ice (when using fresh mangoes only)

→ Optional Toppings

08 - A few threads of saffron
09 - Fresh mint leaves
10 - Additional mango pulp for glass decoration
11 - Chopped pistachios

# Instructions:

01 - Toss the frozen mangoes into your powerful blender along with milk, mango pulp, and just a hint of salt. Whip everything up until the mangoes are completely broken down and you've got a smooth mix. This first blend helps smash up those tough frozen bits before adding the yogurt.
02 - Now add your yogurt and 2 tablespoons of honey or sugar to the mix. If you're working with fresh mangoes instead of frozen ones, toss in ½-¾ cup of ice now too. Keep blending until everything's silky smooth with no fruit chunks or ice bits left.
03 - Give your lassi a quick taste and see if it needs more sweetness. Add extra honey or sugar if you want. Just remember cold drinks often taste less sweet when they're chilled, so you might want to make it a bit sweeter than you think. Give it a short blend to mix in any extra sweetener.
04 - For a fancy touch, drizzle some extra mango pulp around the inside of your glasses before you pour. Fill each glass with your freshly made mango lassi and drink right away while it's nice and cold. Top with mint, saffron, or pistachios if you're feeling fancy.

02 - Can't find mango pulp in stores? Just swap in the same amount of mango sorbet for pretty much the same taste and texture.
