Tiny Apple Caramel Treats (Print Version)

# Ingredients:

→ Caramel Layer

01 - 1 batch homemade caramel sauce
02 - 3 tablespoons (24g) plain flour

→ Crust

03 - 1 cup (134g) crushed graham crackers
04 - 2 tablespoons (26g) granulated sugar
05 - 1/4 teaspoon cinnamon powder
06 - 1/4 cup (56g) melted unsalted butter

→ Filling

07 - 12 ounces (339g) softened cream cheese
08 - 1/2 cup (112g) light brown sugar, packed
09 - 2 tablespoons (16g) plain flour
10 - 1/2 cup (115g) fresh sour cream
11 - 1 1/2 teaspoons vanilla flavoring
12 - 2 large eggs, warmed to room temp

→ Apple Topping

13 - 2 cups (213g) diced Granny Smith apples
14 - 1 teaspoon squeezed lemon juice
15 - 2 tablespoons (28g) brown sugar
16 - 1/2 teaspoon ground cinnamon
17 - 1/4 teaspoon grated nutmeg
18 - More caramel sauce for topping

# Instructions:

01 - First, whip up your caramel sauce. Grab 1/2 cup and mix it with flour until it's lump-free. Leave this mix out at room temp. Stick the leftover sauce in the fridge for later.
02 - Warm your oven to 325°F (162°C). Put paper liners in a cupcake tin and give them a quick spray if you want. Stir together the cracker bits, sugar, cinnamon, and melted butter. Push about 2 tablespoons into each liner. Pop in the oven for 5 minutes, then let them cool down.
03 - Turn your oven down to 300°F (148°C). Mix the cream cheese, brown sugar, and flour till smooth and fluffy. Fold in the sour cream and vanilla. Add the eggs one after another, stirring gently. Put 1 tablespoon of your caramel-flour mix in each cup, then top with the cream cheese mixture.
04 - Bake them for 20 minutes, then switch off the oven but keep them inside with the door shut for another 10 minutes. After that, open the door a crack and let them sit for 15-20 more minutes before moving to the fridge.
05 - Toss the chopped apples with lemon juice, brown sugar, and spices in a pan over medium heat until soft. When the cakes are cold, top each one with warm apple chunks and a good drizzle of caramel.

01 - You can make these tiny treats ahead of time just keep the apple mix separate and warm it up when serving
02 - They'll stay tasty for 4-5 days if you store them in a sealed container
